Yvette’s Tuna Melt with Nola Pepperdew Mayonnaise

Aaaahhhh comfort food, we all love it! Few dishes are as loved as the classic tuna melt, but if you’re looking for a way to take this classic sandwich to the next level, here;’s Yvette’s Tuna Melt with Nola Pepperdew Mayonnaise.

This takes the traditional tuna melt and gives it a spicy, flavourful twist by using Nola Pepperdew Spread Mayonnaise, a tangy and zesty spread made with sweet pepperdew peppers. The addition of capers, red onion, and hard-boiled egg adds even more depth and texture to this already delicious dish. And with the combination of cheddar and mozzarella cheese melted to perfection on top, this tuna melt is sure to be a hit with everyone at the table.


  • 1 can of tuna per person
  • 1 cup of Nola Pepperdew Spread Mayonnaise
  • 1 chopped red onion/spring onion/brown onion
  • A few capers
  • 1/2 hard-boiled egg per person
  • Squeeze of lemon juice
  • Salt
  • Pepper
  • Hard bread like ciabatta or sourdough
  • 1 cup of cheddar cheese
  • 1 cup of mozzarella cheeseMethod:
  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine the tuna, Nola Pepperdew Spread Mayonnaise, chopped onion,capers, hard-boiled egg, lemon juice, salt, and pepper. Mix well.
  3. Line a baking tray with parchment paper.
  4. Arrange the bread slices on the baking tray and drizzle with olive oil. Rub with garlic.
  5. Grill the bread for 2 minutes until brown.
  6. Remove the bread from the oven.
  7. Spoon the tuna mixture onto the bread slices.
  8. Cover the tuna mixture with a mixture of cheddar and mozzarella cheese.

9. Place the baking tray back under the grill until the cheese has melted and is bubbly. 10. Serve hot.

Optional Extras:

  • For some added heat, add cayenne pepper or hot sauce to the tuna mixture.
  • If you’re making this for kids, remove the capers and add them after grilling is done. Try this for dinner! It is SO yummy!
