How to Make Homemade Mayonnaise

Mayonnaise is a great accompaniment that can be used on sandwiches, salads, and many other dishes. It is also a relatively easy to make at home and most people feel too intimidated to try and make it. The good news is that it’s really simple. Here’s the recipe:


  • 1 large egg yolk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable oil


  1. In a medium bowl, whisk together the egg yolk, mustard, salt, and pepper.
  2. Slowly drizzle in the vegetable oil while whisking constantly.
  3. Continue whisking until the mayonnaise has thickened and is smooth.
  4. If the mayonnaise is too thick, you can add a tablespoon of water or milk to thin it out.
  5. Store the mayonnaise in an airtight container in the refrigerator for up to 1 week.


  • Use a good quality egg yolk for the best flavour.
  • Make sure the oil is at room temperature before you start whisking. This will help the mayonnaise to emulsify properly.
  • Don’t over whisk the mayonnaise, or it will become too thick.
  • If the mayonnaise breaks, you can try adding a teaspoon of lemon juice or vinegar to help it come together.


  • You can also use an  immersion blender to make the mayonnaise. A food processor can also be used, but it is important to use the pulse function so that the mayonnaise doesn’t become too thick.
  • If you don’t have Dijon mustard, you can use any type of mustard that you like.
  • You can add other flavours to the mayonnaise, such as garlic, herbs, or spices.
