- Spinach and Feta Stuffed Chicken Breasts:
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
- Preheat your oven to 180°C.
- In a pan, sauté the chopped spinach and minced garlic in olive oil until wilted. Season with salt and pepper.
- Make a pocket in each chicken breast by carefully cutting a slit horizontally, being careful not to cut through completely.
- Stuff each chicken breast with the sautéed spinach and feta mixture.
- Secure the opening with toothpicks.
- Season the outside of the chicken breasts with salt and pepper.
- Bake the stuffed chicken breasts in the preheated oven for 25-30 minutes or until the chicken is cooked through and no longer pink in the centre.
- Quinoa and Vegetable Stuffed Chicken Breasts:
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup cooked quinoa
- 1/2 cup diced bell peppers (assorted colours)
- 1/2 cup diced zucchini
- 1/4 cup diced red onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
- Preheat your oven to 180°C.
- In a pan, sauté the diced bell peppers, zucchini, and red onion in olive oil until softened. Season with ground cumin, salt, and pepper.
- In a mixing bowl, combine the cooked quinoa, sautéed vegetables, and chopped parsley.
- Make a pocket in each chicken breast and stuff with the quinoa and vegetable mixture.
- Secure the opening with toothpicks.
- Season the outside of the chicken breasts with salt and pepper.
- Bake the stuffed chicken breasts in the preheated oven for 25-30 minutes or until the chicken is thoroughly cooked.
- Apple and Brie Stuffed Chicken Breasts:
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 medium apple, thinly sliced
- 4 oz Brie cheese, sliced
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions:
- Preheat your oven to 180°C.
- Make a pocket in each chicken breast and stuff with the sliced apples and Brie cheese.
- Secure the opening with toothpicks.
- In a small bowl, whisk together honey and Dijon mustard. Brush the mixture over the outside of the stuffed chicken breasts.
- Season the chicken with salt and pepper.
- Bake the stuffed chicken breasts in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
