Who doesn’t love pizza? It’s undeniably one of the most beloved comfort foods, but its traditional crust can be high in carbs and not so waistline-friendly. Cauliflower Pizza Crust is a low-carb and gluten-free crust is not only easy to make but also surprisingly tasty. Here’s how to make it…

Cauliflower Pizza Crust

Ingredients:

  • 1 medium head of cauliflower, florets only
  • 1 large egg, lightly beaten
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 220°C and line a baking sheet with parchment paper.
  2. In a food processor, pulse the cauliflower florets until they resemble fine rice-like grains.
  3. Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for 5-6 minutes, or until softened. Let it cool for a few minutes.
  4. Using a clean kitchen towel or cloth, wring out as much moisture as possible from the cauliflower rice. This step is crucial to achieve a crispy crust.
  5. In a mixing bowl, combine the cauliflower rice, beaten egg, shredded mozzarella, oregano, garlic powder, onion powder, salt, and pepper. Mix until a dough-like consistency forms.
  6. Place the mixture onto the prepared baking sheet and shape it into a 25cm round crust, about 1/2cm thick.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until it turns golden brown and crispy around the edges.
  8. Remove the crust from the oven and let it cool slightly before adding your favourite toppings.

Healthy Toppings

  1. Pesto Chicken: Spread a thin layer of homemade basil pesto on the cauliflower crust. Top with grilled chicken, cherry tomatoes, and a sprinkle of feta cheese. Garnish with fresh basil leaves.
  2. Mediterranean Veggie: Spread hummus over the crust and add roasted red peppers, artichoke hearts, olives, and crumbled goat cheese. Drizzle with a balsamic glaze for an extra burst of flavor.
  3. Caprese: Arrange slices of fresh mozzarella, cherry tomatoes, and basil leaves on the crust. Drizzle with balsamic reduction for an authentic Caprese salad-inspired pizza.
  4. Green Goddess: Smear a layer of avocado spread on the crust and top it with sautéed spinach, zucchini ribbons, and sliced mushrooms. Sprinkle with nutritional yeast for a cheesy flavor without the dairy.
