  • 4 large yellow corn on the cob
  • 4 tablespoons of Nola Mayonnaise
  • 1/2 cup of sour cream
  • 1 teaspoon of cajun spice
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • Chilli powder to taste
  • 2 tablespoons of chopped coriander
  • 1 cup of crumbled feta cheese
  • 2 limes


  1. Mix the Nola Mayonnaise, sour cream, cajun spice, smoked paprika, onion powder, garlic powder, and chilli powder together in a small bowl.
  2. Place each individual corn cob on a piece of tin foil and spread the sauce over each cob.
  3. Wrap the tin foil tightly around each cob and place them in the oven for 30 minutes at 180 degrees Celsius.
  4. Once cooked, remove the corn from the oven and carefully unwrap the tin foil.
  5. Transfer the corn to a serving plate and sprinkle with the chopped coriander and crumbled feta cheese.
