Biltong & Avocado Salad

If you’re looking for a healthy lunch or dinner with something other than chicken or fish, how about trying biltong with avo?

Here’s a cheeky recipe to use sometime this week or weekend…

Ingredients:

  • 2 cups mixed salad greens (spinach, arugula, or lettuce)
  • 1 ripe avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced cucumber
  • 60g biltong, thinly sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large salad bowl, combine the mixed salad greens, avocado slices, cherry tomatoes, red onion, feta cheese, and cucumber.
  2. Add the sliced biltong on top of the salad.
  3. In a small bowl, whisk together the lemon juice and olive oil to create the dressing. Season with salt and pepper to taste.
  4. Drizzle the dressing over the salad and toss gently to combine all the ingredients.
  5. Serve immediately as a light and flavourful meal or a side dish.

This biltong and avocado salad is healthy and rich in protein, healthy fats, and vitamins. The biltong adds a savoury and satisfying texture, making it a great option for a quick and nutritious meal. Enjoy!
