Ingredients:
- 4 large yellow corn on the cob
- 4 tablespoons of Nola Mayonnaise
- 1/2 cup of sour cream
- 1 teaspoon of cajun spice
- 1 teaspoon of smoked paprika
- 1 teaspoon of onion powder
- 1 teaspoon of garlic powder
- Chilli powder to taste
- 2 tablespoons of chopped coriander
- 1 cup of crumbled feta cheese
- 2 limes
Method:
- Mix the Nola Mayonnaise, sour cream, cajun spice, smoked paprika, onion powder, garlic powder, and chilli powder together in a small bowl.
- Place each individual corn cob on a piece of tin foil and spread the sauce over each cob.
- Wrap the tin foil tightly around each cob and place them in the oven for 30 minutes at 180 degrees Celsius.
- Once cooked, remove the corn from the oven and carefully unwrap the tin foil.
- Transfer the corn to a serving plate and sprinkle with the chopped coriander and crumbled feta cheese.
