Ingredients:
- 4 boiled potatoes, chopped into bite-sized pieces
- 2 hard-boiled eggs, using the hard yellow centre only
- 1 teaspoon Dijon mustard
- 1/4 cup buttermilk
- 2 tablespoons pickle juice – nom nom
- 1/2 cup Nola mayonnaise – even more nom nom
- 1/2 cup chopped red onion – use white if you can’t find red
- 2 spring onions, chopped
Instructions:
- Start by boiling the potatoes until they’re cooked through. Once they’re done, let them cool and then chop them into bite-sized pieces.
- Next, hard-boil the eggs and scoop out the yellow yolk centre.
- In a small bowl, mix together the Dijon mustard, buttermilk, pickle juice and egg yolks. Mix until everything is well combined. Just think smooth and creamy like Nola!!!
- Add the Nola mayonnaise to the bowl and mix until everything is thoroughly mixed through.
- In a larger bowl, add the bite sized potato pieces, chopped red onion, and chopped spring onions. Mix everything together until everything is evenly distributed.
- Pour the mayonnaise mixture over the potato mixture and stir until everything is well coated.
- Refrigerate the potato salad for at least an hour before serving. This will allow the flavors to meld together and will make the salad even more delicious.
