
Soup week on Nova 103.5 with Metro Supermarket Eros is officially underway!
The challenge was set – can you make soup for 4 people on a budget of N$100! #nam100dollarchallenge
The Nova 103.5 team visited Metro Supermarket Eros – bought their ingredients on the N$100 budget and came up with the following recipes!
Disclaimer: Chef number 3… misheard and made his soup for 8 people on a budget of N$200, but if you scroll down to the bottom and you see what he spent on his soup feeding 8 people, then you’ll see that he did actually still make the cut for #nam100dollarchallenge.
Day 3 – Tomato & Basil Soup
This one’s a classic—with a little twist of basil and love. Rich, wholesome, and perfect for dipping your favourite bread or jazzing up with a swirl of cream!
Ingredients:

2 Carrots

2 Sticks of Celery

1 Medium Onion

2 Cloves of Garlic

Olive Oil (about 2 tbsp)

2 Chicken Stock Cubes

1 x 400g Tin of Tomatoes (any kind you like)

2 Large Ripe Tomatoes
-
Fresh Basil (about 10g)

Salt & Pepper to taste
(Optional: a splash of cream, or some homemade croutons to top it off)
Instructions:

Start by peeling and chopping your carrots, onion, and garlic. Slice up the celery too.

In a big pot, heat 2 tablespoons of olive oil over medium heat. Toss in all your chopped veg, pop the lid on, and let them soften gently for 10–13 minutes. Stir occasionally so nothing catches.

While that’s cooking, dissolve your stock cubes in 1 litre of boiling water.

Once the veggies are softened, add the tinned tomatoes, fresh tomatoes, and that lovely stock to the pot.

Give it a good stir, bring everything to the boil, then simmer gently for 15 minutes with the lid on.

While that bubbles away, pick your basil leaves.

Take the pot off the heat, season with salt and black pepper, then stir in the fresh basil.

Blend it all up using a stick blender or food processor until smooth and velvety.

Taste, adjust seasoning if needed, and dish it up!
Top with croutons or a drizzle of cream if you’re feeling extra fancy. Perfect for chilly days, lunch with friends, or a cozy solo night in.
