The Nova 103.5 team visited Metro Supermarket Eros – bought their ingredients on the N$100 budget and came up with the following recipes!
Day 5 – Potato & Garlic Soup
Simple, soothing, and oh-so-creamy—this potato soup is the definition of cozy. Perfect for chilly nights, lazy lunches, or when you need a little hug in a bowl.
Ingredients:
5 Medium White Potatoes
1 Onion
3–4 Cloves Garlic
2 tbsp Oil or Margarine
1 Stock Cube (chicken or veg)
½ cup Milk or 2 tbsp Cream
Salt & Pepper to taste
(Optional) A pinch of dried thyme or rosemary
(Optional garnish) Croutons, cheese, or a swirl of cream
Instructions:
Chop your veggies: Peel and dice the potatoes, then finely chop the onion and garlic.
In a big pot, heat your oil or margarine. Sauté the onion and garlic gently until soft and fragrant—don’t let them brown too much, we want a nice pale base.
Add the potatoes, stock cube, and around 3 cups of water. Bring it to a boil, then let it simmer for 20 minutes or until the potatoes are tender and mashable.
Time to blend it smooth—use a stick blender or pop it into a regular blender until silky.
Stir in your milk or cream, heat through gently, and season with salt, pepper, and optional herbs to taste.
Serve it up! Add a sprinkle of cheese, some crunchy DIY croutons, or just enjoy it as is—warm, creamy, and totally comforting.
