Ingredients:
- 500g pork fillet (tenderloin), trimmed of excess fat
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lemon wedges and fresh herbs (such as parsley or thyme) for garnish
Instructions:
- In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and black pepper to make the marinade.
- Place the pork fillet in a resealable plastic bag or a shallow dish and pour the marinade over the pork. Make sure the marinade coats the pork evenly. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or preferably overnight, to allow the flavours to meld.
- Preheat your grill to medium-high heat.
- Remove the pork fillet from the marinade and let any excess drip off. Reserve the marinade.
- Grill the pork fillet for about 4-5 minutes per side, or until the internal temperature reaches 145°F (63°C). Cooking time may vary depending on the thickness of the fillet, so use a meat thermometer to ensure it’s fully cooked.
- While grilling, brush the pork fillet occasionally with the reserved marinade for added flavour and moisture.
- Once the pork is cooked through, transfer it to a cutting board and let it rest for a few minutes before slicing it into medallions.
- Garnish with fresh herbs and serve with lemon wedges on the side.
