Healthy Stuffed Chicken Breasts

Here’s a great idea for dinner this week…stuffed chicken breasts! You can choose whatever filling you love and stuff a delicious chicken breast  with it. Here’s how…

  1. Spinach and Feta Stuffed Chicken Breasts:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

  • Preheat your oven to 180°C.
  • In a pan, sauté the chopped spinach and minced garlic in olive oil until wilted. Season with salt and pepper.
  • Make a pocket in each chicken breast by carefully cutting a slit horizontally, being careful not to cut through completely.
  • Stuff each chicken breast with the sautéed spinach and feta mixture.
  • Secure the opening with toothpicks.
  • Season the outside of the chicken breasts with salt and pepper.
  • Bake the stuffed chicken breasts in the preheated oven for 25-30 minutes or until the chicken is cooked through and no longer pink in the centre.
  1. Quinoa and Vegetable Stuffed Chicken Breasts:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup cooked quinoa
  • 1/2 cup diced bell peppers (assorted colours)
  • 1/2 cup diced zucchini
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  • Preheat your oven to 180°C.
  • In a pan, sauté the diced bell peppers, zucchini, and red onion in olive oil until softened. Season with ground cumin, salt, and pepper.
  • In a mixing bowl, combine the cooked quinoa, sautéed vegetables, and chopped parsley.
  • Make a pocket in each chicken breast and stuff with the quinoa and vegetable mixture.
  • Secure the opening with toothpicks.
  • Season the outside of the chicken breasts with salt and pepper.
  • Bake the stuffed chicken breasts in the preheated oven for 25-30 minutes or until the chicken is thoroughly cooked.
  1. Apple and Brie Stuffed Chicken Breasts:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 medium apple, thinly sliced
  • 4 oz Brie cheese, sliced
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  • Preheat your oven to 180°C.
  • Make a pocket in each chicken breast and stuff with the sliced apples and Brie cheese.
  • Secure the opening with toothpicks.
  • In a small bowl, whisk together honey and Dijon mustard. Brush the mixture over the outside of the stuffed chicken breasts.
  • Season the chicken with salt and pepper.
  • Bake the stuffed chicken breasts in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
