Ingredients:
- 2 Large Shallots chopped finely & fried
- 1 cup vodka added to shallots
- 1 tin of crushed tomatoes
- 1 tablespoon of tomato paste
- 2 crushed garlic cloves
- 1 cup of veggie stock
- 1 cup of Nola Mayo
- 1/2 cup of Cream Cheese
- 1/2 cup parmesan cheese
- Drizzle of olive oil
- Chopped parsley or basil
- 1 chopped chorizo
Method:
- Begin by frying the chopped shallots in a drizzle of olive oil until they are soft and translucent.
- Add the cup of vodka to the pan and cook until the alcohol has evaporated, stirring occasionally.
- Next, add in the tin of crushed tomatoes, tomato paste, and crushed garlic cloves. Stir well to combine.
- Add in the cup of veggie stock and let the mixture simmer for 15-20 minutes.
- After 15-20 minutes, add in the cup of Nola Mayo and half a cup of cream cheese. Stir wellto combine and let the sauce simmer for an additional 10-15 minutes.
- Add in the half a cup of parmesan cheese and stir until it has melted and combined well.
- In a separate pan, fry the chopped chorizo until it is crispy.
- Once the sauce is ready, add in the crispy chorizo and stir well.
- Serve the sauce over cooked pasta of your choice and garnish with chopped parsley orbasil.
